Originally from Australia, Tom grew up in a culture where coffee is a way of life. After graduating with a law degree, he left Queensland in 2008 with one ambition: to introduce France to exceptional coffee. By founding Coutume in 2011, he became one of the pioneers of speciality coffee in Paris. Born out of a manifesto championing expertise, transparency and environmental responsibility, the company oversees the entire coffee cycle, from ethical sourcing from producers to roasting in its workshops in the Île-de-France region. Today, with 14 cafés in Paris, Coutume also supports professionals (the hospitality sector and businesses) with consultancy, state-of-the-art equipment and barista training, to ensure that every brew is an unforgettable sensory experience.
