Chef pizzaïolo

Born to Italian parents, with roots in Puglia, Ciro Panella is head pizza chef at Al Fornello in Lille and a master trainer. Having trained at the Michel Servet Hotel School, he opened a takeaway pizzeria in La Madeleine in 1997, before turning his hand to competition: he was runner-up in the World Pizza Championship in Parma in 2011, French champion and runner-up in the World Acrobatic Pizza Championship, and French champion in the artisan pizza category using a vending machine in 2022. A trainer at the Scuola Italiana Pizzaioli and an instructor at the CMA in Lille, he opened his own school in 2025. He is also an ambassador for Galbani Professionale.
