The BEST OF Mondial du Pain will make its debut on the BAKE stage at Sirha Lyon 2027, bringing together the six top-ranked bakers from the previous edition of the Mondial du Pain.
Presided over by Ji Hyun Jung (South Korea), winner of the 5th edition held in Osaka in 2025, the teams from the Netherlands, China, Taiwan, Spain, Belgium and Mauritius will compete in a final challenge to win the Trophée des Ambassadeurs du Pain.
Each team, made up of a Mondial du Pain candidate and their commis, will take on a series of demanding challenges showcasing their expertise and craftsmanship.
The 2027 edition will introduce two major developments: the inclusion of La Native® among the mandatory ingredients and a reduction in salt content to 13 g per kilogram of flour, a first in the history of international bakery competitions.
