Twelve finalists will go head to head at the Golden Fish, an international competition celebrating the skills of the fishmonger and shellfish trades. Across a series of heats, candidates will be judged on their mastery of the techniques used to handle, prepare and present seafood. The Écaille d'Or award will also recognise the best competitor in the shellfish category.
