OUR JOURNEY We are Émilie and Julien Martinat, former restaurateurs with over twenty-five years of experience in the industry. For many years, we ran three establishments in the heart of Saint-Rémy-de-Provence: Chapeau de Paille (a Provençal bistro), Aïoli & Clafoutis, and Chez Lucien. A year ago, we decided to pass on these three businesses to devote ourselves fully to a project we had long dreamed of. We have a deep fondness for the aperitifs of yesteryear, the craftsmanship of traditional distillers in our villages in Burgundy and Savoy, and those simple, heartwarming moments when family meals conclude with a glass of spirits—often locally produced. DISTILLERY HISTORY The Alpilles Distillery is an artisanal distillery located in Saint-Rémy-de-Provence, in the heart of the Alpilles region. We operate on a human scale, guided by a simple, consistent philosophy: to create products that are straightforward, well-crafted, and authentic—capturing the true essence of Provence. Our approach draws inspiration from the pastis and liqueurs of the past, when families created their own recipes based on the plants, fruits, and resources available in their immediate surroundings. OUR VISION Everything is produced on-site, from start to finish. The plants and fruits are macerated individually and then distilled separately. The various components are then blended and bottled right here at the distillery. Our strength lies in our equipment and organization. OUR MISSION Our production facilities allow us to quickly scale up volume if demand requires it, without altering our working methods or compromising on quality. Our goal is clear: to remain true artisans while ensuring consistent, reliable distribution. PASTIS MARTINAT Four pastis, four distinct personalities inspired by the traditional, homemade *pastissons* of Provence. A meticulous approach in which each ingredient is processed individually—macerated, distilled, or infused according to its nature—before being blended with precision. MARTINAT LIQUEURS Our range features iconic annual botanicals and seasonal fruits in limited editions. We employ a traditional, time-honored artisanal method known as osmotic maceration, where sugar slowly draws out the fruit juice without the addition of water or flavorings. DISTINCTIVE CHARACTERISTICS Deep local roots and a contemporary gastronomic signature Our creations originate primarily in Provence—specifically, in the heart of the Alpilles. This region is our constant source of inspiration: its landscapes, aromatic plants, climate, and lifestyle naturally shape the identity of our spirits. With our pastis, we sought to capture iconic moments of Provençal life—those instances of sharing, tradition, and conviviality that we celebrate all year round.
